If you make sure you have a fair amount of overlap you should be able 
to work around problems of people moving about, but make sure you're 
fairly quick all the same.

If you can work out the total angle of view I *think* you can set 
that up in VRWorx and stitch your semi-circular panorama. 
Alternatively, I think PTGui or RealViz Stitcher (but possibly not 
Stitcher Express) can stitch arbitrary sets of images and render 
composite results.
