A pano head would for sure. I assume you know the "no parallax point"?

Most professionals seem to agree that sharpening should be the last step
in your workflow. So that would be in photoshop. Photoshop also gives you
better control and feedback on what you do. Use unsharp mask and play with
the options. Big % and small radius (like 80%/0.6px) for sharpening and
small % with big radius (like 15%/90px) for local contrast enhancement.
