You can find a lot of excellent information about software (PC or Mac),
equipment, etc. on Panotools wiki
(http://www.panotools.info/mediawiki/). Also, Panotools and QTVR
(http://lists.apple.com/mailman/listinfo/quicktime-vr) mailing lists are
excelent sources of information.
The basic equipment can be a digital or conventional film camera
preferably with a fish-eye but can be done with narrower lens - you will
just have more work to do and harder to get a seamless stitching - and a
panoramic head plus over a mono/tripod.
Africa must be a astounding source of great images for panoramic
photography! :)
