in PTgui create your projects as usual and optimize them.

I assume you have a good sight of the horizon on at least some shots
and that you are at sea level.

Go to the "Control Points" tab and select the same image on the left
and right pane

In the "CP type" dropdown, select "horizontal line (t2)"

to define such a line, you have to set the points on the horizon, the
one in the left pane at one end of a line on the horizon and the other
at the other end.

If you have vertical lines (e.g. buildings), use the "vertical line (t1)".

Define two or three such lines (minimum is two at about 90° yaw to
each others).

Optimize.

Look at the pano in the Panorama Editor (Menu: Tools -> Panorama Editor).

If the horizon is not yet OK, bring up the numerical transform window
(Edit->Numerical Transform or the 123 button)

Play with the roll value.
